I often tell you about the Game Nights happening in our house. It doesn’t matter which sport it is, as long as a big game is on television, the guys in my life always gather around in the living room. When I say the guys in my life, I mean my husband, two of my brothers-in-law, and my brother. You can add my nephew and my sons who seem to start becoming interested in sports because of their fathers and uncles. Jenny and I are always on the sidelines, watching them enjoy whatever sport is on the screen. But we don’t mind actually. These guys work hard the whole week- they deserve this kind of break once in a while.
So while the boys are busy with their sports, my sister-in-law and I often make them snacks. Sometimes, it’s as simple as popcorn, chicken wings, or potato balls. Sometimes, we make them something more special that takes effort to prepare.
One example of that is this taco casserole, which can also be a dip. Whenever I serve this for dinner, we eat this with crusty bread and salad. However, when this is served during game night, it turns into a dip; so we serve it with tortillas or nachos.

Quick Tip: The casserole can be made up to 2 days in advance; cover tightly with foil and store in the refrigerator, then reheat the covered dish in a 350°F oven for 30 minutes until warmed through.
