Winter is coming to an end, but it’s still a bit cold isn’t it? It’s still a good time for a hearty soup that tastes so good you will want to have it even if the weather is warm. I am not the typical housewife anyway. I don’t cook food just because they are in season; I cook food because my family loves them. So whether I am making soup during the hottest day, it’s fine with me.
My sons love soup so much and it doesn’t even matter what type of soup they are eating. They love blowing on their hot soup. In fact, I think they’re enjoying that more than anything else.
But their bowls are always almost empty whenever I serve soup. If the soup contains large chunks of vegetables or meat, chances are there will be some left. But if it’s really just soup, not even a drop can be found.
I am luckier than some moms because my kids are not picky. Even when they don’t like the food, they will still try it. It makes it so much easier for me to find recipes that they will like.
This vegetable and white bean soup is a family favorite. The combination of these vegetables and the white beans just taste so great together. The soup is flavorful even without the meat, and there’s nothing better than that!
