What are your favorite side dishes to eat with meatloaf? Personally, I enjoy mashed potatoes, green beans, and dinner rolls with lots of butter.
Instructions
Chop up 1 larger size onion and 1/4 green pepper into small pieces. Place a pan over high heat and add 1/4 stick of butter, the chopped onions and green peppers and 1 tsp of minced garlic
Fry for approximately 7-10 minutes
FOR THE SAUCE: Get a bowl, combine 3/4 cups BBQ sauce and 6 tbs ketchup and stir in well
Get a big bowl and add 1-1/2 or 2 pounds of ground beef to the bowl.
Season with 2 tbs of Worcestershire Sauce, 2 tbs of Ketchup, 1 pack of Lipton Onion Soup mix, 1 tsp of Garlic powder, 1 tsp of celery salt, 1 tsp of pepper, and 1/2 tsp of thyme
Add the fried chopped green peppers and onions, 4 tbs of drained diced tomatoes, 2 eggs, 1/2 cup of milk, 3/4 cup of breadcrumbs, and blend well
Place in baking pan and shape meat into a meatloaf shape
Add 1/4-1/2 cup of beef broth to the pan of meatloaf and coat the top with the bbq sauce/ketchup mixture
Bake on 350 for 1 hour and 15-20 minutes
