If you do have the time, you could cook some chicken breasts or thighs just to make this yummy casserole.
However, I think this is the perfect recipe for your leftover chicken (or turkey!), and if you don’t happen to have any, you could always get a rotisserie chicken instead. Ingredients
1 Can of cream of chicken condensed soup
1 cooked chicken in pieces
2-4 Large potatoes, peeled and sliced
Instructions:
Heat the cream of chicken condensed soup in a skillet, just until warm.
When the soup is warm, add in the chicken pieces. Mix to combine, for about 2-3 minutes. Pour the mixture in a baking dish.
Cover the chicken mixture with potato slices, to create the top layer. If preferred, sprinkle with salt and pepper.
Bake in 350F for 30-40 minutes.
