He dropped the chicken in the crockpot and let them cook away while we enjoyed our day. In the evening, he prepared some rice and a light sauce with a can of cream of chicken soup and some cheese and slapped it all together. It was certainly delicious! I love eating this type of food when the weather starts to get colder and the days are darker. Nothing like being nestled up with a big old hearty helping of chicken and Ritz cracker casserole.
I absolutely agree! You are going to love the Ritz cracker coating because it is perfectly buttery and crispy all at the same time. It is the perfect dinner for entertaining guests.
Ingredients
10 3/4 ounce can Campbell’s cream of chicken soup
1 pint Daisy sour cream
1 1/2 cups crushed Ritz crackers
1/2 cup Land O’ Lakes butter, melted
4 to 6 boneless skinless chicken breasts
Instructions
Combine the soup and sour cream in a bowl and set aside. In another bowl mix together crackers crumbs and melted butter.
Place chicken in a slow cooker that has been sprayed lightly with non stick cooking spray. Spoon the soup/sour cream mixture over the chicken and then sprinkle with the Ritz cracker topping. Cover and cook on low for 7 to 8 hours, or cook on high for 4 to 5 hours.
