Sometimes, You Just Want To Make a Really Simple And Amazing Cake

Over these past couple of weeks we’ve had more surprise guests than ever. Maybe it’s because so many of our friends have family living in our town, and whenever they visit home, they stop by our house, too.

I think it’s wonderful but sometimes it can be a little stressful, too. What I mean is, I love seeing friends, but I’m not a big fan of surprise visits. I’m not the kind of person who always has something delicious to serve with a cup of coffee, unless I specifically got a call from someone asking if they could come over.

But I’ve learned my lesson lately, and I decided to make a couple of coffee cakes and freeze them for these kind of surprising situations! I had this really tasty recipe for a cinnamon almond cake that I hadn’t made in years, but I knew it was easy to make and that it freezes well. So now I have plenty of dessert in the freezer, and I’m just waiting for more folk to come over!
