Leftover Christmas Ham Soup: Santa APPROVED!

We cooked a pretty big ham for Christmas.

We were expecting friends and family members to come over for dinner and help us destroy it! Well, they did come over and we had a great time but, apparently, I had gotten a little carried away with all the side dishes and desserts, so there was a lot of ham still left in the fridge after a couple of days. Since I can’t bear to throw any food away, and it would have been way too salty for our furry family members, I decided to find a new recipe for it.

I came across this beautiful, creamy soup recipe and I immediately knew this was it. Potatoes and ham, and just a few other simple ingredients that we all have in our kitchen – it couldn’t be easier! You could, of course, add whatever vegetables you may have in the fridge, or spice this up the way you want it, but this recipe is very tasty as is.

We had enough ham to make a double batch of this, and boy, am I glad we did! This turned out so delicious we could have served it for Christmas instead!

Quick Tip: Add some red pepper flakes for a bit of a kick!
