Do You Remember This Old-Fashioned Candy?

Whoever thought potatoes could be turned into candy? These are uh-mazing! I remember my grandmother making these for us way too many decades ago than I care to remember…

My mother did not care for these – I guess she had had her share of these when she was a kid, but to my siblings and I it was the best candy we had. To us it was mind blowing that you could actually make candy from mashed potatoes! I am planning on making these for my kids over the holidays!

 

Ingredients

1 cup mashed potatoes, room temperature or cold

1/2 cup Land O’ Lakes unsalted butter, room temperature

1 tsp vanilla extract

3 pounds Domino powdered sugar

1/2 cup smooth peanut butter, divided

 

Instructions:

Combine mashed potatoes, butter, and vanilla, stir until fully combined. Add powdered sugar, one pound at a time, stirring well. The dough will be very wet at first. Once the dough is thoroughly mixed, divide it into two halves.

Flatten out one of the halves of dough on a sheet of wax paper. Use your hands to shape it into a rectangle. Cover with another sheet of wax paper and, using a rolling pin, roll the dough until it is roughly 13-14 inches long and 10 inches wide.

Lift the wax paper and dough carefully, place on a baking sheet, and chill for about 5-10 minutes only. Remove from refrigerator and spread 1/4 cup peanut butter evenly onto the dough. From the long side, carefully roll into a log and wrap well in wax paper.

Repeat with other half of dough. Chill the logs for at least 2 hours before slicing. Once chilled, slice into 1/2-inch pieces and serve.

Quick tip: To make ahead, store prepared potato candy, layered between sheets of wax paper, in the refrigerator in a covered container for up to 2 weeks.
