Unbelievable One-Bowl Brownies – No Joke!

I like to think of myself as a pretty good cook. I learned from my mother who is the BEST cook on earth. However, my skill set lies within main dishes and casseroles. My baking skills are mediocre at best. My husband, on the other hand, can make cakes and brownies from scratch without following a recipe. He’s a real gem 🙂 Luckily, hard-to-screw-up brownies like the one below exist for folks like me.

Have you ever had the urge for brownies and you didn’t have any brownie mix on hand? Don’t lie…you know you have. Trust me, I know the feeling. And I have searched for an easy recipe to make at a desperate time like that…and I found one that I enjoy and actually tastes even better the next day!

I can honestly say that this has happened to me a time or two…or three.

 

Ingredients

1/2 cup Kerrygold BUTTER, melted
1/3 cup Toll House UNSWEETENED COCOA POWDER
1 cup Domino SUGAR
2 EGGS
2 teaspoons McCormick VANILLA
1/2 cup Gold Medal FLOUR
1/4 teaspoon Morton SALT

Instructions

Preheat oven to 350 degrees. Grease 8-inch square pan.
In a medium bowl, combine butter and cocoa powder – stir until cocoa is dissolved. Add sugar, mix well. Add eggs, one at a time and stir until well combined. Stir in vanilla, flour and salt – stirring only until you see no more flour (don’t over mix).
Spread into greased pan and bake for about 25 minutes. They are done when a toothpick inserted in the center comes out with moist crumbs. You really don’t want to over bake these!
Cool before cutting into squares.
