I like to call winter the Soup Season. When it’s so cold outside, there’s nothing better than a bowl of hot, hearty soup to make you feel warm again. And it’s so inexpensive, too! Such a great way to save a few bucks after all the Christmas shopping. This soup does something special to your heart. I always say that hot soup cures what ails you even if it isn’t a physical sickness. Break up with your boyfriend? eat soup.

Ingredients

1 stick Land O’ Lakes butter or margarine

1 c sliced thin carrots

1 c sliced thin celery

1 c flour

2 c diced cooked turkey or chicken

1 gal Swanson chicken stock

2 pkg roasted chicken romaine noodles plus the seasoning packs

1 Tbsp salt and pepper

1 Tbsp fresh or dried parsley

1/2 c diced onion

Instructions:

In a large stock pot add butter and melt. Add the onions, carrots and celery, sauté until almost tender.

Add the flour and brown for a few minutes, keep stirring as you don’t want it to burn. Add the chicken stock and stir until the flour is dissolved. The mixture will become creamy.

Add the salt and pepper, as well as the romaine noodle packs and seasoning. Cook for a few minutes before adding the chicken or turkey, then simmer until the veggies are tender. Sprinkle in the parsley before serving.
