Aunt Helen’s Pumpkin Scotchies – Perfection In The Form of A Cookie

Pumpkin, oatmeal, butterscotch…oh my!

If there is one thing you should know about me it is that I am crazy for pumpkin. I look forward to pumpkin spice season all summer long. By the time August comes rolling around I am more than ready to get cracking on my pumpkin flavored recipes. These cookies really won over my taste buds. They taste heavenly and they are ever so easy to make. Plus, my husband and kids gobbled them up like nobody’s business.

I made a whole bunch of these cookies and froze some of them in the freezer for later…well, it’s later, guess I better get those scotchies outta there! LOL!

Quick Tip: PAN COOKIE VARIATION – Grease 15 x 10-inch jelly-roll pan. Prepare dough as above. Spread into prepared pan. Bake for 18 to 22 minutes or until light brown. Cool completely in pan on wire rack. Makes 4 dozen bars.
