These beautiful little treats have me as a runner-up for the best cheesecake baker in the family. This means they are quite the treat because not just anyone or anything can come in competition with my cousin’s secret family recipe. These are the perfect size to pop in your mouth while someone else is talking to you and with the little bit of cherry sauce in the middle, we have got a winner!
I mean, could it be more straightforward than this? Easy, impressive and totally delicious. There is no dessert I am craving more than this right now!
Ingredients
2 packages (8 ounces) Philadelphia cream cheese, softened to room temperature
3/4 cup Domino white granulated sugar
2 eggs
1 Tbsp vanilla extract
1 Tbsp lemon juice
1 can cherry pie filling or topping
Crust:
1 1/2 cups Keebler graham cracker crumbs
6 Tbsp Land O’ Lakes butter or margarine
8 Tbsp Domino sugar
Instructions
Line your pan with miniature paper liners.
Mix graham cracker crumbs, butter and 8 Tbsp of sugar together. Press 1 tsp of mixture into the bottom of the paper liners.
In a mixing bowl, beat cream cheese, sugar, eggs, lemon juice and vanilla. It should be light and creamy without any lumps. Spoon mixture into paper liners, almost filling them.
Bake at 350° F for 15 minutes.
Let cheesecakes cool completely, then top with a teaspoonful of cherry pie filling.
Optional: Add some chocolate to the tops as a garnish.
