What’s Hiding Beneath This Double Crust Pie? Find Out Here!

The first night that they arrived at our house, I had made a simple cordon bleu casserole and she actually gave me praise. That made me worry a bit more about the pie the next morning. Was it going to be good enough? When I set it out on the table, she looked a little worried about what I was trying to do. Pie for breakfast? When I cut into it though and started passing out slices, her face relaxed and we actually had an enjoyable meal, and the rest of the visit went just as smoothly.

Great for breakfast, but there’s no reason why you can’t serve this any time of the day!

 

Ingredients

2 Pillsbury pie crust
1 lb Oscar Mayer bacon; cooked and crumbled
1/2 can(s) Spam; cubed
6 pre-cooked sausage links; cut up
6 eggs
1/2 c onion; diced
1/2 c bell pepper; diced
1/3 c milk
1 c Kraft cheddar cheese; shredded
salt and pepper

Instructions

Cook bacon until crisp, then crumble. Set aside.
Use part of the bacon drippings saute onion, bell pepper, and Spam.
Beat eggs, milk, salt, and pepper.
Lay bottom crust in pie pan, then add crumbled bacon in first. Then layer some onion mixture on top of bacon, add some cheese, then part of egg mixture, next add the sausage then repeat until all is in the pan. Use the second pie crust to lay on top, brush with milk so it doesn’t get too dark.
Bake in the oven at 350 degrees for one hour. Let settle for few minutes before cutting.
