Pumpkin Spice And Everything Nice In These Dark Chocolate Truffles!

My husband does not like dates at all (not talking about dinner and a movie, by the way) so I decided not to mention those to him, when I served these for dessert.

He didn’t realize what was in these! He ate three and said these would be awesome with a cup of strong coffee. I totally agree. I think I’m going to whip up another batch and take them to my sister for her birthday. She has been trying to leave all the white sugar out of her diet so I bet she would love these!

 

Ingredients

1 cup dates pitted

1 Tbsp cacao powder

1 Tbsp maple syrup

1 Tbsp pumpkin puree

1/4 tsp cinnamon

1/8 tsp nutmeg

1/4 cup dark chocolate chips

 

Instructions:

Puree the dates in a food processor.

Add the cacao powder, honey, pumpkin puree and spices, blend. You’ll get a large, dough-like ball.

Tear off pieces and roll into 1-inch balls. Rub your hands with a little bit of coconut oil to prevent the mixture from sticking.

Melt the chocolate chips in a double broiler or the microwave. Coat each of the balls with the chocolate, and place on sheet of parchment paper. Decorate with sprinkles, or let them harden and then drizzle with melted white chocolate.

Place the truffles in the refrigerator for about an hour before serving.
