I am a major lover of meatloaf and so is my family. I’ve made it many ways including Mexican and Italian. However, until recently, I had never even contemplated making meatloaf in the Crock Pot. I always assumed that this method would render a greasy block of meat. Doesn’t sound too appetizing now does it? Well, guys and gals, I’m super glad that I gave it a go because the loaf of meatiness turned out GREAT!
I made all the fixins’ for this meatloaf like mashed potatoes, green beans, and fresh dinner rolls. I’d say the meal was a total success. Judging by my family’s empty plates, it was!
Ingredients
2 pounds ground beef
1/2 cup green peppers, chopped
1/2 cup yellow onions, chopped
1 1/2 teaspoon Morton salt
2 Eggland’s eggs
1 cup Ritz cracker crumbs
1 1/2 cup Heinz ketchup, divided
1 teaspoon French’s yellow mustard
1/4 cup Domino brown sugar
Instructions
Combine ground beef, green pepper, onion, eggs, salt, cracker crumbs, and 3/4 cups of the ketchup in a large bowl. Use a spoon or your hands to incorporate the mixture.
Line your slow cooker with aluminum foil and spray with non-stick spray. Shape the meat mixture into a loaf and place in slow cooker.
Cook on the LOW setting for 6-8 hours or the HIGH setting for 3-4, until the meat is no longer pink. In the last 15 minutes, mix together remaining ketchup, mustard and brown sugar and spread on top meatloaf. Let cook for remaining 15 minutes.
Let cool, slice and serve.
