Growing up, my mom would make meatloaf at least once a week. My family loved it. She’d make mashed potatoes and a veggie to go along with it. it was always a meal that I was happy to get off the school bus too. Mom’s meatloaf recipe is amazing and I wouldn’t change a thing about it…except maybe how it is cooked. Mom made her meatloaf the traditional way; in the oven. I made a left turn off the beaten path and made my meatloaf in the slow cooker.
So many people think that this method leaves the meatloaf greasy. Well, what I’ve found is that it isn’t any more greasy than baking it in a pan in the oven. Just drain the grease as you normally would and there you have it.
