Slow Cooker Whole Chicken: We Clucking LOVE This Recipe!

So, I had this whole chicken in my freezer, right? I’ve avoided making it because I don’t want to deal with leaving the oven on for hours during the heatwave of July. However, I discovered this fabulous recipe for slow cooker whole chicken and it was like a light bulb went on. How come I never thought of using the slow cooker for a whole chicken before? What a genius idea! And I don’t need to turn the oven on. Woohoo!

My family really enjoyed this delicious chicken dinner served with all the fixings like carrots, potatoes, and a side of chicken seasoned rice. Oh, and we had homemade buttermilk biscuits, too.

 

Ingredients

2 teaspoons Morton sea salt

2 teaspoons McCormick paprika

1 teaspoon cayenne pepper

1 teaspoon thyme

2 teaspoons ground black pepper

1/2 teaspoon garlic powder

1 whole chicken

1 medium onion, sliced (optional)

2 stalks celery, sliced (optional)

cilantro for garnishing (optional)

 

Instructions

Mix together the spices in a small bowl.

Clean chicken and remove all the giblets. Dry it with a paper towel.

Rub the spices onto the chicken as well as inside the chicken.

Place the chicken in a plastic bag and refrigerate it over night.

When ready to cook, throw in half of sliced onion at the bottom of your crock pot. Add chicken and place the other half onion on top of it. Add celery slices around the chicken.

Cook on low for 6-8 hours.

Dish the chicken and garnish with cilantro leaves. Serve warm.
