When it’s time for my husband and I to go to the doctor for our annual check up, we usually go together. We both have a little bit of anxiety when it comes to seeing a physician, so if we are together it makes things a little easier. It’s also more convenient to go at one time rather than taking separate trips over to the office. The last time we were there, both of us got the same bad news. We needed to start eating healthier. It wasn’t something we hadn’t been told before, but this time, the doctor wasn’t messing around.
He told us to limit our red meat intake, and to eat more vegetables. That went against just about everything that we had been eating up to that point. There wasn’t a week that we would skip eating a nice, fat, juicy steak one of the days. Now, I had to find some substitutes.
I wasn’t crazy about eating a lot of salads, but this one from Group Recipes really caught my eye. It looked fabulous, and it sounded fairly easy to make. Thank goodness… we both really enjoyed it!
