I had to be sure to get her recipe from her before leaving that afternoon to get my kids. I couldn’t believe how simple they were to make. Probably not the healthiest option, but certainly not the worst either. I dipped mine in ranch dressing that day, but I have also done then in a blue cheese dressing and let me tell you, delish! These are a great way to feed that little hunger pain in your belly when you don’t want to make a complete meal. I know that the fill me up for a while!

Ingredients
6 Red roma tomatoes, or any you prefer
Wondra Flour
2 Eggland’s Best eggs, beaten
oil to fry
Breading:
1 1/2 cups panko bread crumbs
1/2 cup Kraft Parmesan, grated
1/2 cup romano cheese, grated
1/3 cup parsley, chopped (additional for garnish)
1 pkg. Hidden Valley ranch dressing mix
salt and pepper to taste
Dipping sauce of your choice
Instructions
Slice tomatoes and set aside.
Heat oil to fry
Combine bread crumbs, cheeses, 1/3 cup parsley, salt, pepper, dressing mix
Pour mixture into a shallow plate
Dip tomato into Wondra, egg, then breading mixture
Fry until golden brown, about 2-3 minutes each side
Drain on paper towels.
Garnish with parsley
