I had three cousins that all graduated right around me. That meant that we were pretty close friends growing up. When it was time for their graduation parties, of course we always showed up. My Aunt was there sweating it away in the kitchen every time to. That woman always seemed liked Super Woman to me. There wasn’t any job that she wouldn’t take on. Not only would she take it on, she would also get it done, and get it done right. That included cooking.
For these parties, which all occurred on separate years, she did ALL of the cooking herself. Granted we had a small family, there were still about 100 people to feed. When it was time to eat, she would give each of us a moist, tender, garlicy piece of boneless fried chicken breast.
Her recipe was similar to this one from Group Recipes. I couldn’t believe when I found it on there, because it seemed almost identical. I had to call her and ask, and she even said it was pretty darn close!
