This is awesome to make and take to potlucks and other dinners. Not many people will bring a vegetable like corn. Usually it’s cold relish trays or salads if veggies are on the table. It’s nice to know that you’re going to be the only one serving something. I like that there are never any leftovers and that I get all kinds of compliments on this. Whenever someone requests the recipe, I don’t hesitate to share it with friends and family.

This is perfect during the summer, or any time of the year!
Ingredients
½ pound of Hormel bacon, cut into small cubes
1 cup diced red onion
3 tablespoons Land O’ Lakes butter
4 cups of cooked corn, taken off the cob
Salt and Pepper to taste
½ teaspoon chipotle spice (more or less to taste)
Parsley if desired
Instructions
In a large skillet cook your bacon pieces and onions together. You want to cook over medium heat until the bacon browns and the onions start to caramelize. This should take about 10 to 15 minutes.
Now add the butter and let it start to melt and sizzle a bit.
Toss in your corn and stir it around, let everything come together.
Add your salt, pepper and chipotle spice. Stir until incorporated evenly.
Remove from heat and transfer to a large bowl.
Toss parsley over top just before serving if desired.
Serve with a big old “baconallthethings” smile!
