I had invited a friend of mine over for dinner when I found out that she was moving back to the area. She had moved away after high school to go to college and work on her career. Now that she had successfully completed both of those, she wanted to come home and start a family. She graciously accepted my offer and I was over the moon to see her in person again. We had talked on the phone and through email over the years, but we had only seen each other a handful of times.
Much to my surprise, she showed up with who turned out to be her fiance. She forgot to fill me in on that part! He of course was more than welcome, but I was worried I hadn’t made enough to eat.
Thankfully, I had this recipe from Group Recipes laying on the counter and all the ingredients to make it. They were an effective way of filling everyone up without running out of the main entree. She even took the recipe with her to try at home.
