Our neighbors were going to be hosting a BBQ, so they invited us over to join them. They just put in a new swimming pool so I was pretty excited to get the kids over there to go for a dip. The day was going to be a beautiful one, and I wanted everything to turn out perfectly. I asked if we should bring anything and they said maybe just a pasta salad to pass. There were going to be a few other families joining us as well so that sounded like a good plan to me.
I wanted to do something besides the traditional macaroni or potato salad, so I went on the hunt for something a little bit more unique. I had some fresh veggies growing in my garden, so when I found this recipe on Spend With Pennies for a cucumber pasta salad, I figured I would give it a whirl.
It went together really nicely, and it looked pretty fancy when it was done. Everyone at the BBQ had some and I got a lot of compliments on it. I still make this whenever I take a dish to pass in the summer. It’s a great way to do up some garden fresh cucumbers!
