My husband and I had some mutual friends that we knew in college, which is where we met. The school we went to is about an hour away from where we live today. The friends still live in that same college town. Once in a while, they will make the hour drive to see us, and other times we will make the drive and see them. I’m just happy that we keep in touch. An hour isn’t all that far to go when it means you are going to be spending some quality time with people you love. The last visit, they were coming to our house, so I had to make a nice dinner.
We will go out to eat sometimes, but I didn’t really feel like sharing them with the entire restaurant. It’s nice and relaxing to just sit at our own dinner table. I found this recipe on Spend with Pennies and it sounded like it would do the trick.
It went together really easily, and the flavor was amazing. I served this over a fettuccine pasta and it was just like eating out, without the big bill at the end.
