One thing I liked about this soup is that I can kind of clean my fridge out! If I have a bunch of veggies that need to be used up I will throw them in this soup and there you go! It’s a perfect excuse to use up all of the veggie sin the fridge instead of wasting them which I do not like to do! I thoroughly enjoy making this soup because it truly does taste really good. I love making a giant pot of it and then using the leftovers for the next day or stocking up my freezer with this yummy dish. My husband loves it too. He’s even made it before. Try this soup and it won’t be the last time you make it!

Ingredients
1 can (10 oz) diced tomatoes and green chilies
16 oz. package Great Value frozen mixed vegetables
6-8 potatoes peeled and diced
1 small onion diced
6 beef bouillon cubes
8 cups water
salt and pepper to taste
Instructions
Brown meat on stovetop and drain grease. Combine all ingredients, heat over low for about an hour. Add salt and pepper to taste.

Quick Tip: This Poor Man’s Soup can also be prepared for the crockpot. Simply brown the beef or turkey first and combine all ingredients in crockpot and cook on low for a couple hours.
