It was the unofficial kick-off to summer, and we weren’t doing anything. I had just had my second child, and we usually would go camping, but I wasn’t ready to take a baby out to the campground quite yet. The look of disappoint on my son’s face was enough to break my heart. I didn’t know what to do for him. I considered sending him and his dad to camp by themselves, but I didn’t want to miss out on this very rare family time. Then it hit me, we could camp at home! My boy was little enough that he would still be very excited about that.
So that Friday afternoon, before he got out of school, I got everything set up in the backyard. (Thanks to some help from the neighbor who came and sat with the baby.) The look on his face was priceless when he saw what I had done. We had a tent, picnic table, lights, campfire, the whole thing.
That night for dinner we grilled some hot dogs, and I had made a big bowl of this salad for the weekend that I found on All Recipes. This was a huge hit among even my boy who doesn’t usually eat veggies in anything. He was just so happy we didn’t have to cancel our camping trip!
