When sometime comes, I don’t always want to, or have enough of an appetite to make a full three or four course meal. It’s just my husband and I, so a lot of the times we will just grab something light. Most of the time I make a chicken Caesar salad, because I know that’s something that we can both agree on. The problem with that is, it can get boring after having it once or twice a week for a few weeks in a row.
I found this recipe on All Recipes, and it sounded like it just might work for our regular summer menu. I was a little nervous about what the hubby would think, just because he isn’t usually a big fan of salads with dressing like this.
He actually loved it and had two helpings. We had plenty of leftovers, and they stayed good in the fridge for several days. We just munched away at it throughout the week until the bowl was empty. I’ll be making this again soon for sure!
