Each and every summer meant that we were going to spend a week with my Grandma down in Kansas. She has lived their her entire life, but when my Mom got married to my Dad, they decided that they wanted to raise their family somewhere else and relocated. We go to visit the farm at least twice a year though and I love it there. There is always so much to do. Just breathing in the fresh air is enough to make me want to stay there forever. I always hated when tit was time to go home.
Not only did we have a ton of fun, we also had a lot of great food. My Grammy was a master in the kitchen. I think it was all her years of experience in the kitchen. She had six kids so she had to get good at what she was feeding them. Her chicken casserole was always my favorite.
When I found this recipe on Recipe Lion, I could hardly believe my eyes. It was like Grammy had written it herself. It was exactly how I remembered. Now I know why she made it all the time. Simple, easy, affordable, and you can feed quite the crowd.
