One thing that I love about pot roasts is that they are easy to make. I hardly ever use my oven to make a pot roast anymore. I get the old crock pot out. Put everything in there and let it cook all day! This is the perfect way to cook for me! I like being able to get other things done as well. Make a delicious meal and smell it cooking while you are folding laundry and doing anything else that you usually do around the house. You can even let it cook and go run your errands around town! This is the perfect pot roast to come home! It tastes so delicious and is a great twist on a classic dish.

Who doesn’t love a crock pot meal?! I know that I do!
Ingredients
- 3 pounds chuck roast
- Salt and pepper to taste
- 1/4 cup Land O Lakes unsalted butter
- 1/2 (1 ounce) envelope Kraft ranch dressing mix
- 1/2 (1 1/4 ounce) envelope Lipton au jus mix
- 1/2 cup sliced pepperoncini peppers or more if you like
- 1 cup diced carrots
- Fresh cilantro leaves for garnishing
Instructions
- Rinse chuck roast and pat dry with paper towels. Season each side of the roast with a little salt and pepper.
- In a large nonstick skillet. Melt butter over medium-high heat. Sear the roast in the skillet, about 30 seconds each side.
- Transfer the roast into a 6-quart slow cooker with all the remaining butter. Sprinkle ranch dressing mix on top of the roast. Place pepperoncini peppers and carrots on top. Cover and set on low for 8 hours.
- Dish and garnish with cilantro. Serve with mashed potatoes. Enjoy!
