My dear friend Susan invited my family and I over for dinner a while back. I said yes of course but I was a little apprehensive because Susan is a health nut. I have seen some of the things that she eats and I just couldn’t do it! I am not knocking the healthy, clean eating world I just really love fats and sugars. At least I am honest about that. I also thought that my kids wouldn’t like what she made.
I try to make healthier dinners for my children, but I don’t imagine the loving flax seed and quinoa. Call me crazy! Well we went over there because I am a good friend and I genuinely enjoy any time that I have with Susan.
I will be the first one to say that I should have known that Susan would have made us a delicious meal. My dear friend knows me well. She takes any opportunity to educate me on healthy cooking, but she definitely showed me how healthy can be delicious too.
She made this wonderful balsamic chicken in her slow cooker that was so scrumptious that I just had to get the recipe from her! She was definitely pleased to hear that too! This dish is so delectable that I couldn’t wait to make it myself.
