My friend mentioned that she always loved loaded potatoes and never thought about adding chicken to them and making a casserole! This is truly a delicious meal and is super easy to make. My friend said that she added some green peppers and chilies to this casserole and that it was super delicious! This casserole is perfect on it’s own but if you want to jazz it up with your own flavor, then by all means have at it! I usually use Frank’s hot sauce, but I have also used Cholula’s hot sauce, which was just as good! Use your favorite hot sauce and it will turn out great!

This is a perfect casserole to bring to a potluck or a friend’s house!
Ingredients
- 1 lb boneless, skinless chicken breasts, diced
- 6 medium, red potatoes, diced
- 1/3 cup Hellman’s mayonnaise
- 1 tsp Morton salt
- 1 tsp McCormick’s black pepper
- 1 tbsp. McCormick’s Paprika
- 2 tsp. McCormick’s garlic powder
- 2 tbsp. Frank’s hot sauce
- 2 cups Kraft Mexican blend cheese
- 1 cup bacon, cooked and crumbled
- 1 cup green onion, diced
Instructions
- Preheat oven to 400 and grease a 9 x 13 baking pan.
- In a bowl, combine the chicken, potatoes, mayonnaise, salt, pepper, Paprika, garlic powder, and hot sauce.
- Pour mixture evenly into greased pan.
- Bake in preheated oven for about 55 minutes making sure to stir mixture every 25 minutes.
- Remove pan from oven and sprinkle cheese, bacon, and green onions evenly on top.
- Place pan back in oven for an additional 5-8 minutes, or until cheese is fully melted.
- Remove from oven and serve!!
