When I was pregnant with my second child, all that boy wanted me to eat was pancakes. I ate them just about ever single day for breakfast, and then sometimes I would have them again for dinner. Needless to say, I packed on some pounds during that pregnancy. By the time he was born, I never wanted to look at another pancake again. That lasted for about a year, and then I realized that my now one-year-old probably wanted pancakes for breakfast once in a while.
The thought of eating a traditional flapjack actually made me gag a little bit. I thought that there had to be something that I could do to jazz them up a bit. That’s when I found this recipe on All Recipes for strawberry vanilla flavored pancakes. Now, that’s something I may be able to enjoy.
I made them about a week later and we sat down for a nice Sunday breakfast. Everyone at the table gobbled these right up. I probably should have made a double batch because they were gone lickity-split. Who knew a little baby like that could eat so much!
