My mother is not Italian at all, but she loves Italian foods. Pizza, spaghetti, sausage and peppers, ravioli, lasagna… all of it. She could eat each one of these things once a week and never switch to anything else. So, recently when she was coming to stay at my house while my husband and I were going out of town for the night, I wanted to make her something I knew she would enjoy. I never even considered rolling all of her favorite foods into one, until I found this recipe.
A ravioli pizza lasagna…say what?! That was my first reaction when I saw this on All Recipes. I didn’t think something like that could even be possible, until I made it myself. It was actually pretty fun to make, and really very easy. Way easier than a traditional lasagna I can tell you that much.
When Mom arrived on Friday night, this was cooking up to perfection in the oven. She asked if she should order some delivery for her and the kids. I said no, dinner is done as soon as the time goes off. Enjoy! She had to call me later that night to tell me how delicious this was.
