When I was in college, my roommate was one of the best cooks that I had ever met in my life. Well, besides my mom of course. We got to live in an apartment after our freshman year, so we had our own kitchen and we often went in and bought groceries together just so that we could stay out of the school cafeteria. It was nice to be able to eat at home rather than going to the big lunch room that felt so much like high school. She always came up with new fun dishes.
In fact, that was the first time that I had ever tasted a tater tot casserole. The first thing I thought was, why was my mom hiding this amazingly yummy treat from me my whole life. I did ask her once, and she said that she didn’t make them because she never heard of them.
Spend With Pennies had a nice twist on the traditional dish that I couldn’t wait to try when I found it… taco tater tot casserole. My family loves tacos and tater tot casserole, so this was a meeting that was meant to be. The taste was like no other. We all went back for seconds.
