These meatballs were a huge favorite at the shower. Even the mother-to-be loved them so that was nice. After all, the party was for her and her baby, so I was happy that I could make something that she could enjoy. I had a few of the guests come to me and ask about the recipe and when they found out that it was chicken instead of beef, they all nodded their heads in approval. I even gave out a few copies of the recipe at the end.

We have these at our house all the time now. I even make large batches and freeze them for later!
Ingredients
1 pound ground chicken
1 tbsp. minced basil
1 tbsp. minced rosemary
1 tbsp. Italian flat leaf parsley, chopped fine.
1 med. onion chopped very fine
3-4 small cloves of garlic minced
1 roasted red pepper(the kind that comes in a jar in oil not drained) minced.
3-4 tbsp. of olive oil
salt and pepper
Instructions
Preheat the oven to 350,
line a cookie sheet with parchment paper.
Add all to the ground chicken and mix well.
Make into small meatballs.
Bake for 12-15 min, they do not take long.
When done put them in your soup, when your soup is done they will be to.
Ground meat by itself is flavorless, adding these ingredients.helps to give it a nice flavor.
This is a recipe you can do a meat loaf with also. When i do i add a few drops of Worcestershire to the mix.
If you find the mixture to moist add some ground up oatmeal to it.
I use lactose and gluten free oatmeal.
This is so versatile, you can use it for burgers also.
If you do not like crunching into onion it can be grated in the meat.
Sometimes i add ground pork to the ground chicken, nice flavors.
You can add more or less herbs, onion and garlic, personal choice.
