Have you ever been so hungry that nothing sounded particularly good to eat? I had that problem the other day! Every time I went to sit down and eat I ended up having to get up and do something for the kids or the dog. It was one thing after another. Before I knew it, it was after 5 o’ clock and I had realized that I had not eaten anything all day long!
Oh, the life of a mother! There is always something going on to distract you from doing something! Well, this time it was eating. I would like to say that I wouldn’t mind that happening more often, maybe shave off a few pounds, but I’m not that lucky! So, there I was hungry as can be. But nothing sounded good. I really did not want to go out to eat.
I wanted to make something at home. My fridge and freezer were full of food. So, I decided to search the internet for inspiration. I spent about 30 seconds searching and I found this recipe. It looked so delicious that I started salivating just looking at the pictures. I had everything to make this french onion beef stroganoff casserole so I went for it and was glad that I did!
