Every Sunday morning, I get the kids and husband up as early as possible. I like to go to the first church mass available so that we can get home and enjoy the rest of the last day of the weekend. We usually have to be there by nine in the morning, so we don’t have a ton of time to get something to eat. I usually just tell the kids to grab a toaster pastry or something and my husband and I just chug a cup of coffee. Service is only an hour so we are home by ten. There’s still plenty of time for a nice breakfast.
I like to go all out on Sundays whenever I can. Sausage, eggs, bacon, toast, potatoes, fruit, and either pancakes or waffles. At least that’s how it used to be. After I found this recipe on All Recipes for Lemon Poppy Seed Pancakes, it was all over. There was no more question about pancakes or waffles.
These are the only thing I make on Sunday now to go along with our after church buffet. They are amazing! Lemon poppy seed is my favorite, but I’ve only ever made them in a muffin until now. I can’t get enough of these.
