My cousin that I hadn’t seen in almost two years was coming for a visit with her family. When we grew up, lived on the same block, so we spent a lot of time together. I remember when she used to come over for dinner, she would always want my mom to make macaroni and cheese. It was every kids favorite meal and still is I think. I wanted to make her a dish from our past at least one of the days that she was around. It was going to bring back so many good memories.
I couldn’t find my mom’s’s recipe because we had just moved and all my stuff was everywhere and nowhere at the same time. Instead, I decided to use a recipe that I had found on All Recipes. I went to the supermarket and stocked up on everything we would need including these simple ingredients.
When she asked what was for lunch the first day they were home, I told her it was mac and cheese and she just started laughing and laughing. I made a double batch because there were so many of us. It was so easy and really tasty. We talked about the days of our younger years. It was a great time for everyone.
