Every weekend we are heading out super early in the morning for some sort of sport tournament or practice. Okay, well not every weekend, but it seems like it. The idea of me making breakfast before we leave is out of the question. It just isn’t happening. The kids either grab a bowl of cereal or we will hit the drive-thru and get something on the way. I always want to make a nice yummy breakfast, as it is my favorite meal of the day, but it just doesn’t happen. When we do have a day off, which is practically never, I get in the kitchen.
I don’t even care if I get to sleep in or not if I know that I’m going to enjoy a scrumptious breakfast like this one from Small Town Woman. This egg and tater tot casserole is not only tasty, but super easy to make. My kids and husband think it’s a holiday when I make it.
We usually pair it up with some fresh fruit and make a complete meal out of the dish. It’s nice to start the day off with something like this. I know it’s going to be a good one when we do!
