We have chicken at my house pretty regularly. It’s good, it’s cheap, it’s easy to make. I think it’s probably a staple at most people’s house. I’m guessing that most other people struggle like I do though with what to do with the chicken. I can’t just eat a plain chicken breast two or three times a week. It’s so boring. Something like that makes it hard to even like chicken if you eat it too often. So, I’m always keeping my eyes open for new recipes and ideas. Sometimes I even go looking for them.
There is a recipe on The Recipe Rebel that I couldn’t wait to try, even before I read the ingredients or instructions. It just sounded amazing. Nacho cheese stuffed chicken… say what? I love nacho… well I love any kind of cheese really. I love anything that’s stuffed with chicken, too.
These were a lot easier to put together than what I had originally thought, and the family just gobbled them right up. We have these a few times a month right now. It’s a great way to change up the boring ol’ bird.
