I love breakfast. Not only is it the most important meal of the day, I also think it’s the most delicious. There is so much that you can do, and it’s usually more affordable to make than a traditional lunch or supper so… bonus! Whenever I come across a new breakfast option, I am all for trying it out on my family. I have two hungry boys and a very unpicky husband at home, so they are always game for whatever I give them. They are just happy that I have prepared something for them period I think.
Julie’s Eats & Treats pointed me in the direction of these yummy breakfast enchiladas. Now, I’ve had enchiladas for dinner before. They are one of my favorite meal choices. We have them at least once a month. I never thought about having them in the morning though. Except for when I sneak a leftover from the night before.
These are so different, yet still just as tasty. My whole family devoured them and went looking for more. Next time I am going to have to double up on the recipe for sure.
