My Dad used to make the best potato soup that I had ever tasted. It was so yummy, I could have eaten the entire pot myself. I always tried to copycat that recipe, but I could never get it just right. His was always way creamier than I could ever get mine, and I just didn’t understand. After years of trying, I finally came upon this recipe on Julie’s Eats & Treats that I thought just might work. There was cream cheese in it… of course! Why didn’t I think of that before? Cream cheese is obviously going to be creamy.
So, I gathered up all the ingredients the next time I went shopping and tossed this in the crock pot before heading out to work. The smell in the house when I got home that day was incredible. I couldn’t wait to taste my new creation. I had to sneak a little bowl before dinner time just to see if it worked.
It was just like I remembered! I can’t believe that all these years all that I was missing was a little cream cheese. Just wait until you try it. You’ll see what I mean.
