We had a new family move into the house next door to us after it sat empty for several years. I wasn’t worried about it sitting. It was kind of nice knowing that we weren’t bothering anyone over there and they weren’t bothering us. You just never know who you are going to get. When we saw the family pull up with their moving truck though, we were actually pretty excited. They looked like a nice couple, about our age, and they had a couple little ones close in age to our kids. This just might work out.
I wanted to make a good first impression, so as they were unloading the last of their boxes, we walked over and introduced ourselves to them. Then, I invited them over for dinner the following weekend. “Get yourself settled in and then come on over and I’ll cook!” They looked pretty happy about that idea.
There was a recipe on Group Recipes that I had been waiting to try, so I figured now was the time. It was this wet burrito casserole and it sounded perfect for the occasion. I was sure to check and make sure they liked Mexican food before I made it.
