One of my aunts so nicely invited herself over to our house for a visit recently. Not that I don’t love her to death, but she is one of those women who expects everything to be just so, especially when she goes somewhere. I mean, she invited herself for dinner if that tells you anything. Great, now what am I going to cook, is all I could think. I thought about cheating and ordering something out and just putting it in one of my pans, but she would know. Because, well, that’s who she is. So I couldn’t do that.
I had to take to the wonderful internet to see what I could come up with. I knew that none of the recipes that I had were going to be good enough. Thank heavens I found this recipe for easy tortellini on Group Recipes. I was worried that it might be too easy for her, but I was running out of time.
Preparing this the day of her visit was extremely simple, but also quite terrifying. I watched anxiously as she bit into it, just waiting for the criticisms, but they never came… whew! That was a close one.
