It was a crazy week. So crazy in fact, I forgot to go grocery shopping. There I was, standing in the middle of the kitchen, with hardly any food in the fridge or pantry. What the heck was I going to do now? The children were going to start circling the kitchen in no time, looking for their nightly meal. The grocery store was going to take at least an hour, and I just didn’t have that type of time. I started pulling out what few ingredients that I did have on hand, and started tossing things together.
I ended up with a beef casserole that was just like this one from Group Recipes. There weren’t many ingredients, but I knew it was going to go together nicely. Cheese, meat, and flaky biscuits always make a good combination, but I had to wait and see what the kids were going to think.
No only did my kids love it, but my husband really enjoyed it too. I thought it was delicious, and I was just happy that I could make something for the family to eat!
