When I was younger, we lived down the street from a Latina family. Their daughter was the same age as I was, so we went to school together. It didn’t take long for us to become fast friends. We were in the same class many years, rode the same bus home, and played together outside. This friendship lasted all the way through high school, college, and still to this day! One of my fondest memories of my childhood was going to her house for dinner. Her mom was the best cook, and she always did authentic Mexican foods.
Enchiladas, tacos, burritos, beans, rice, everything you could imagine, she made the best. On special nights, she would serve a cheesy dip much like this one from The Pioneer Woman before she served dinner. Oh. My. Goodness. I could have eaten the whole pan myself!
After seeing this recipe, I couldn’t wait to try my hand at it. I wasn’t sure that I would be able to match up with my friend’s mom’s recipe, but it was surprisingly pretty darn close!
