We had some company coming from out of town to visit for the night. I hadn’t really expected for them to come to our house, I thought that we were going to meet for dinner somewhere. That’s the way life goes though. I was stuck in the middle of a rock and a hard place. I had to prepare a meal, but I also had to make my house look presentable. That’s when I pulled out my tried and true slow cooker… but what was I going to put in it? I remembered a recipe for southwest chicken soup I had seen on Julie’s Eats & Treats.
That was going to be the ticket. I had made it once before, so I knew it was good. I also knew that it was really easy to make. I did it the way that I had the first time, in my crock pot instead of on the stove. While it was cooking, I had time to clean up around the house.
By the time our guests arrived, dinner was ready, and so was I. This went over really well with everyone, even the little kids. It’s a great way to sneak in some veggies, smothered in all that yummy cheese!
