I LOVE LOVE LOVE watermelon. When summer hits, I could eat the stuff every day. My son shares in my sentiment. He always wants me to get a watermelon in December, but they are so small and extremely expensive compared to what you can get in the summer. I always have to tell him to be patient… watermelon season is coming soon! The fruit is perfect to me all on it’s own, but when I find a recipe like this one from The Pioneer Woman, of course I am going to give it a try.
I made this for a baby shower that I attended recently in the early summer months, and it was a huge hit. I love that it’s so colorful, and the flavor speaks for itself. Whenever I take it to functions, I usually just serve it as a dip with tortilla chips. At home though, I have used it to garnish all different kinds of foods.
My whole family goes crazy when I make watermelon salsa. I have to block them from the kitchen or it never makes it to the bowl! Fresh fruits and veggies like this just scream summer!
