My kids are crazy about pancakes. They could eat stacks and stacks of them all day long. The problem is, I don’t normally really care for them. Once a month for me is almost too much for pancakes. They just taste kind of blah to me. I think maybe the kids just like dumping all that syrup on top to make them so sugary they are bouncing off of the walls. I was looking through different recipes online for pancakes, and came across this one on The Pioneer Woman.
Well, that looks refreshing, I thought to myself. I do enjoy the taste of lemon very much, but I wasn’t sure what the kids would think of their new flap jacks. Much to my delight, they really enjoyed them. They still dumped all their syrup on top, but I ate them just plain and they were divine.
They weren’t too much more difficult to make than the pancakes that I was used to making, so I can see these going on our table in rotation with the plain ones. I can’t take those away from the kids.
