When I was a little girl my grandmother used to make potato pancakes all of the time! It took me a long time to realize that those weren’t the typical pancakes that you have for breakfast. That’s how common they were in my household versus regular fluffy pancakes. These potato pancakes were always so delicious that I would have a few of them!
I can picture grandma standing the kitchen, preparing these wonderful potato pancakes and getting ready to fry them up for a meal. I can imagine the smell too! Yum! You know that wonderful smell that makes you feel so nostalgic. Well this is one of those foods for me. I just love potato pancakes! They are so easy to make and they come out so crispy.
They are really convenient to make when you have leftovers of mashed potatoes from the night before. I mean what a great way to use these mashed potato leftovers! It’s two birds with one stone. Get rid of your leftovers and make another meal out of them! Perfect if you ask me! Now that I am talking about them I feel like I need to make them!
